Our Shop(s)
Valkyrie was born on November 28th, 2019, after more than five years of planning, preparation, and practice in sourcing and roasting the best coffee from every corner of the world.
We opened our flagship roastery on Main St in downtown Chester on Feb 1, 2020, and have been having a blast ever since!
On September 10, 2025 we opened our second location at 1398 Kings Highway in Sugar Loaf NY. Named Valkyrie Brunch House, we took an early 1900’s train station and caboose and built an international fusion brunch house. We carry the same pastries and drink specials there, but also have a specialty brunch menu available from Thursday to Sunday from 7:30-2pm.
Our Roaster
Dakota Rudolph
Owner and Roastmaster of the shop, Dakota has over a decade of experience in coffee roasting and sourcing. Valkyrie was his dream from a young age, with much of the design and names in the shop inspired from his Swedish heritage.
Our Coffee
All of our coffee is roasted in house and sourced directly from the farms we are in partnership with. We only use single-farm, single-origin beans that attain specialty coffee grades from experienced Q-graders.
We currently roast batches on our Ambex Ym-5 and Aillio Bullet Roasters.
