Colombian Finca Ines is in the house, and ready to rock your world.

It’s an intense fruit bomb with notes of kiwi, watermelon, and bubblegum. It’s so fruity and sweet and refreshing, and we’re hooked on iced pourovers of it. You may remember this coffee from last summer when we featured it as a weekly one-off, but now it’s here to stay for the season.

Columbian coffees are generally known for being very nutty and dark, due to the Colombian Coffee Federation that primarily encourages washed process coffees that all taste similar to each other. This lot is an extremely rare example from a farm that is non-Federation, which allows them to experiment more and do wild things like natural processed coffees. The natural process is basically the equivalent of leaving the coffee cherries out in the sun, until they dry up like a raisin, then milling out the bean and fermenting it so that the cherry’s fruit acids and sugars infused into the bean.

  • Brewing Instructions: Measure 1g of coffee for every 16g of water. Heat water to 198f, and then brew using your method of choice.
