Introducing the latest heavyweight in our fruity light roast collection, this Colombian is a notch above anything we’ve served prior.

A Tabi varietal, this bean is put through a special anaerobic fermentation with intense heat exposure to cause the natural sugars and acids in the cherries to fully ferment and saturate our beans. After drying and roasting, you immediately can smell sweet berry jam coming from it. Typically you need to wait weeks before enjoying a light roast natural process, but this bean is capable of an excellent brew only a few short days from when it is roasted.

Best served as a drip or pourover, especially well on a clever dripper where the full immersion gives this a heavy body and sweet acidity.

  • PROCESS: Panela Natural Fermentation
  • Brewing Instructions: Measure 1g of coffee for every 16g of water. Heat water to 198-200f, and then brew using your method of choice.
