We’re so excited to offer this coffee from our new friend Pablo del Cid from Guatemala. We met Pablo and his young family at our shop as they were traveling in the states, and we instantly connected and bonded over our passion for coffee farming processes and direct trade ethics.

Pablo crafted an exceptional bean in this example from his Finca el Jardin Farm.

This is a mixed-fermentation anaerobic process that carries very sweet and citrusy notes throughout the cup. At first there’s an aroma like baklava, with honey and nutty pistachio and fried dough. But as the cup matures and cools it begins to remind you of a key lime pie and coconut cream with a heavy body for being such a light roast.

  • Brewing Instructions: Measure 1g of coffee for every 16g of water. Heat water to 198-200f, and then brew using your method of choice.
