Description

This one is a Full City+ (medium-dark) roast with notes that remind us of macadamia nuts, butterscotch, toffee and sugar cookies. It has a balanced sweetness and almost no bitterness to it, with a full and velvety body. We prefer this as either an immersion pourover or espresso, but it does equally well as a drip option or cold brew.

The coffee was responsibly sourced with our friends at Cereza Coffee and was farmed by the Aprysa collective of women-owned coffee farms in the most remote area of the Peruvian rainforest. These ladies harvest together and combine several high quality microlots into one beautiful and balanced coffee that we are proud to serve. It is certified fair trade organic at origin, but we choose not to label our products as such to pass along the savings to the consumer and create an accessible product.

The group is certified fair trade and organic and 42% of the producers are women. They have a holistic approach to producing coffee, and place an importance on improving their community by economically empowering their members, educating their youth, and positively impacting the environment.

Through quality initiatives like improved processing and the construction of solar dryers, Apasajem has achieved high quality standards which have stabilized the group’s supply chains. Within their community, and beyond, this farm focuses on securing a bright future for the youth. This is exhibited by the 100% school attendance rate among the children of the  coffee producers. Regarding their environmental stewardship, the farmers  maintain biodiverse farms with 46% of land in coffee production, 21% in forest conservation, and 28% as grass and fields.

  • Brewing Instructions: Measure 1g of coffee for every 16g of water. Heat water to 198-200f, and then brew using your method of choice.
